But, it is a nice tool that makes me happy to use and does an excellent job. It was above what I really needed to make bread. I do make sure to clean the blade well after use as once dough dries on them, you might as well change the blade. Very heavy whole wheat breads, high hydration breads, ciabatta, baguettes, different white loaves and such. I have used it to make cuts in a variety of dough. I am not saying it is really dangerous, I am saying it is a very sharp blade, going into a tight slot, so be patient, have good light if your eyes are aging, and have fun using it. Look at the picture before you start so you are actually trying to install new blade correctly. It is not easy to replace blades and I would not rush it and would pay close attention to avoid slicing a pinky. It is a nice piece of craftsmanship on the walnut and fits very nicely in hand when using. I spoiled myself with this buy and was surprised that it really does make cuts into dough better than sharp knife or other solutions. So it is best to keep a closed container for blades, and throw the whole (sealed) container out when full. A final thought on safety (with any lame)- when you are ready to replace the blade, you are disposing of something that is still sharp enough to hurt someone, such as a family member who takes out the trash. I also bought a wooden box, at a craft shop, to store the Lame & some spare blades, because I felt that the original box wasn't sturdy enough for long-term storage. I place this over the blade, when I am not using it. To solve this, I took a wine cork & cut a slit in it. There is the valid concern about the lack of a safety cover. If you have trouble with this, you may need to adjusst the angle at which you hold it. These blades are quite sharp and the angle can be adjusted a bit, so you should be able to get a nice, clean slash in your bread. (Mineral oil or woodblock oil is fine.) It uses double-edge razor blades, which are replaceable, cheap and available at most supermarkets or drugstores. I like the look & feel of the handle, though you must remember that it will need to be oiled on occasion. I have had this bread lame for about 8 months & use it regularly.
